“Puristic, straightforward and clear” are the distinguishing characteristics of our wines. That’s why we do not feel the need to create new trends or follow them. The key ingredients that give our wines an unmistakable character are skill, knowledge and experience along with intuition and passion. First and foremost, our wine has to convince us. The growing numbers of wine connoisseurs who find their way to our doorstep every year bear testimony to the quality of our wines and to a growing enthusiasm for our wines’ elegant Burgundian style.
Quality has many facets. For us, quality is defined by the ideals that we have of outstanding wines. An ideal image, which is always a little different, and always just a little beyond our reach, but our goal remains to get as close as possible to this ideal. To achieve this, special parameters are required.
Physiological maturity: natural cultivation, healthy soils and vines, traditional methods of harvesting grapes that are perfectly ripe but not overripe, and gentle processing are all prerequisites to make great wine. But achieving our goals requires more: the courage to experiment, the joy our work brings us and the passion we have for wine.
Yield regulation: Quality or quantity? This is a decision that every winemaker has to make. At our winery, the decision has definitely been made in favor of quality. High quality wines that boast intensive flavors can only be achieved by consistently reducing the yield.
Time: To do the right thing at the right time is one of the most important factors in producing high quality wines. When and at what time a certain step in the process is to be carried out and when one needs to be patient plays an essential role. Often it makes more sense to let a young wine have another year to mature than to bring it to the market in a rush.
Intuition: Over 30 years of experience, know-how and intuition guide us when it comes to recognizing special characteristics of a vintage at an early stage and to then ensure that these special characteristics are being given due consideration during the processing of the grapes and the wine production. Gut feeling, innovation and the courage to try the unusual then often result in pleasant surprises.
Traditional wine making: True to the principle “less is more”, we consistently pursue our philosophy of quality during the wine making process by giving preference to traditional, gentle methods of processing. This entails doing without pure-breeding yeast, and to only practice open mash fermentation for red wines, as well as letting our wines mature in old and new oak barrels made of French Oak.
